Best and easy rejigged congolese Croquettes(Kro-kets)You must try

My mom used to make those "croquettes" as a desert. It's similar to a very crispy cookie, but yet very different at the same time. You have to try it to understand. I am not sure if this recipe is a typical Congolese recipe or if other African country have a variant of it, but let me tell you, you will be addicted to this and it takes less than an hour to have a jar full of sweet, tasty and crispy croquettes! Trust me on this my foodie friend!
INGREDIENTS
1 Litre : Oil (to fry in a casserole - Liter for my american foodies :))
800g : All purpose flour of your choice
10g : Cinnamon
400g : Cold or room temperature water
15g : Vanilla
75g : Sugar (I use raw brown sugar and it tastes amazing. You may adjust to taste)
STEPS
1- First you need to warm up your oil in your casserole
2- Then pour the flour in a mixing bowl and add your cinnamon. Mix the two
ingredients
3- Once your oil is hot, pour roughly 80g of oil in your flour and mix it evenly
throughout. I recommend using a spatula at first not to burn yourself and once the
oil is mixed in with the flour, you can go ahead an use your hands or a food
processor, but I prefer doing it manually.
4- Remove your oil from the stove while you proceed with the next steps.
5- In a mug, add the water sugar and vanilla. Mix it all together until the sugar has
dissolved.
6- Add the water mixture progressively to the flour and knead as you go.
7- Your dough should be elastic and no longer sticky.
8- Cut your dough and shape it to look like small baguettes, then cut small bite size
pieces.
9- Your ready to fry your pieces! Wait for your oil to be hot and start frying until golden.
