5 minute Easy plantain breakfast!!

To make a good fried plantain it's important to choose your plantain correctly. Some people like their plantains really ripe, some other prefer them greener, therefore less sweet and slightly tougher once fried.
The image on the left shows a nicely ripped plantains (yellower in color and also softer to the touch when you buy it) and greener plantains. Depending on the recipe your doing, you may decide whether you need it greener or ripe.
For my 5 Minute Plantain Breakfast recipe, I already had plantains that I had bought during the week, that I was saving for the weekend. So they had ripened during the week. They were soft and sweet, great as a desert, but can also be enjoyed for supper or dinner.
All you need (for 2 people)
1- Two to three plantains (or more if you have a big appetite) 😉
2- Vegetable oil to fry
3- Salt
4- Eggs
5- I had leftover spicy beans (see my previous recipe linked below and my YouTube channel)
Very simple ingredients, use whatever you want to have it with! It's your breakfast make it enjoyable for you!
Steps
1- First, start by heating your oil
2- While your oil is heating, prep your plantain by removing the skin and cutting it
3- Then I give my plantain a quick rinse
4- Add some salt, and toss you plantain to spread the salt evenly
5- Your oil should be hot by now, start frying
6- Fry your eggs or cook any breakfast side dish of your choice and plate
It should be ready cooked in about 15 mins top all you have to do is wait, but keep watch, when your plantain is ripped it cooks faster and can caramelize quick. The entire prepping process shouldn't take you much more than 5 minutes! Enjoy a coffee of your beverage of choice while you wait@
It's easy and a good alternative to bread and potatoes for breakfast. Try it if you want a little switch-up!
