Dear friends, I am pleased to share with you this breakfast idea. It's easy, you can adapt it to your needs and to the time you have. I'm doing a spicy breakfast bean from scratch using dried beans that I have soaked overnight but you can simply use canned beans.
I personally avoid canned food as much as I can, since my body does not react well to it, but I understand it's convenient and easier when you're busy! So choose what you prefer!
WHAT YOU NEED
1 - First off, boil your beans (if you use dried beans), and add :
Salt
Pepper
Bay leaves
Tips : Check your beans regularly, and add more water if it dries up and your beans are not soft yet.
2 - Second, once your beans are soft, drain the water and rince your beans.
3 - Third, you're now ready to fry your beans. Here are the ingredients you need :
Ingredients
Onion
Garlic
Mushrooms
Tomato paste
Fresh tomato
Spices
Salt
Pepper
Chili flakes
Garlic powder
Parsley
Basil
Paprika
Powdered chicken broth (or whatever you have on hand)
Steps
1 - Start by frying your onion, your garlic, and your tomato paste in a little bit of olive oil
2 - When your onions have softened, add your beans
3 - Then add your mushrooms
4 - Finally add your spices
If you want more sauce, had a little bit of water, but remember the tomato and mushrooms will release water. Add spices to taste, make it your own! I've also added sesame oil for more flavour, but it's optional!
Let me know how you like it when you try!
Much love!
